Using what has been called the “World’s First Uni Pocket” (uni being sea urchin), this rich sea urchin butter that was once incredibly popular has seen a renewal, with a new limited lineup including “Hokkaido Sea Urchin” and “Tohoku Sea Urchin”.

Japan’s first specialty butter brand, CANOBLE, has used the world’s first uni pocket to renew their special “Extreme Gourmet Sea Urchin Butter!” (極生グルメうにバター!) series, and from August 4 they began selling this luxury butter online.
So what is this “Uni Pocket?”
The newly developed uni pocket is made with its own standard equipment. On the sea urchin butter base, an indent is created, and as the sea urchin is thawed, none of the umami flavors escape, but rather flavor the entirety of the butter. The butter itself is seasoned only very lightly with soy sauce and mirin, so as not to detract from the rich flavors of the uni.
Hokkaido Uni Butter
The “Hokkaido Sea Urchin” butter has been topped with the saltwater urchin shipped straight from Hokkaido.
This has been an extremely popular product in the past, and this time they have carefully prepared it with twice the concentration of sea urchin.
The sea urchin you see here has been drained of water until its weight has been reduced by half, and carefully prepared and flown in so that you can eat it raw, and taste twice the sweetness of ordinary sea urchin. It’s a serious flavor bomb.
