The profound world of Chinese cuisine has different ingredients and recipes depending on areas such as Beijing, Sichuan, and Shanghai. Recently, restaurants in Tokyo have their own unique Chinese recipes arranged to Japanese tastes. We will introduce ultimate Chinese cuisine elaborated by each restaurant.
Zuisetsu, a Cantonese restaurant with creative tastes and ingredients

This Chinese restaurant is situated in a quiet residential area near the south exit of Umegaoka Station on the Odakyu Line. Its soup stock is Cantonese style with plain taste, based on a variety of seafood. With fresh seafood from Shimane Prefecture far west of Tokyo, it creates dishes taking full advantage of ingredients, such as sashimi, mushimono (food cooked by steaming), and tsuyusoba, its special dish similar to ramen. It also uses Japanese seasonings including soy sauce and miso in a creative way, and then produces original tastes. Please try this superb Chinese restaurant, which has been highly rated for two years in a row by a world-famous gourmet guide.

Maison de Yulong, pioneer of nouvelle chinois

Located at a residential corner at the back of Akasaka Sacas, this restaurant has a sophisticated Western appearance. Having been practicing nouvelle chinois, Chinese cuisine cooked with seasonal ingredients, it has been attracting many fans since they opened in 1995. The must-have meal at this restaurant is stewed whole shark fin. Black colored whole shark fin stewed with tamari (rich) soy sauce is served with fried rolls. Chef Abe, who has an excellent reputation about how to use fire and oil, which is the basics of Chinese cuisine, makes us smile with his fundamental and creative meals.
