1. Umegaoka: Superb sushi at an affordable price
This restaurant offers its fresh ingredients generously at an affordable price. It was originally founded in 1963 at Umegaoka in Setagaya Ward, and now there are 6 branches within Tokyo. Their seasonal ingredients are directly sent from the fish market, and they are voluminous. They have a variety of seasonable set menus including itasanno-omakase-nigiri (chef's recommended sushi, 3024 JPY) and tokujo nigiri (extra special sushi, 1728 JPY). Also the restaurant is spacious (82 seats), and it has a lively atmosphere with sushi chefs' loud calls echoing throughout.

2. Yoshino Sushi: Established in 1879, a long-time local favorite
At the time of its establishment, the fish market was based in Nihombashi. The sushi is made with fresh ingredients from Nihombashi with a technique called Edomae (Edo style), and they offer Edomae sushi at an affordable price. With the technique unique to Edomae including proper methods of seasoning each ingredient differently with nikiri (boiled sake) and tsume (sweet and spicy sauce), they offer glossy and beautiful sushi with pride. Every morning ingredients are selected carefully and delicately prepared, and they offer specialty Edomae sushi at a reasonable price (lunch from 2160 JPY and dinner from 8640 JPY).

3. Eat your sushi - then make it too! A nigiri workshop is available at Tsukiji Tama Sushi
This is an Edomae sushi shop with a history since 1924. There is a private room for 4-40 guests available, and they offer a variety of course menus depending on the budget and the number of guests. Fresh ingredients are directly sent from the fish market, and they can be also enjoyed as sashimi and hot pots. This shop is the birthplace of the popular temaki-sushi (hand roll sushi), which they offer at a reasonable price. They also offer workshops called Sushi Nigiri Experience for Overseas Visitors (only at Harumi-dori branch, held on Saturdays, telephone reservation required, priced 8640 JPY) run by sushi chefs in which you can learn, make and sample sushi.
