"Oku-Shibuya" roughly covers the stretch behind the Shibuya Tokyu Department Store main building up to Yoyogi-Koen Station, including the Tomigaya, Kamiyama-cho, and Udagawa-cho neighborhoods, about 2 kilometers from Shibuya Station. This quiet pocket in the middle of the city has become a magnet for distinctive cafes and stylish little boutiques.

Before it was a cafe, CAFE ROSTRO was ROSTRO JAPAN, a dedicated specialty roastery. Unlike most shops that roast and serve in one space, this one focused purely on the craft of roasting, and built its reputation on bean sales alone, becoming one of Tokyo's specialty coffee icons. The roastery opened its doors in 2002, and over the years, customers kept nudging the owner: “You should really open your own cafe!”

That dream finally came true in May 2017, when CAFE ROSTRO opened on the ground floor of the original roastery. Once Knutsen introduced the concept, a specialty coffee movement swept the globe, and by 2009 the Specialty Coffee Association of America (SCAA) had set even stricter standards, requiring beans to be cupped by a certified Q-grader and score above 80 points to earn the specialty label.

Keiichi Shimizu, the heart and soul behind CAFE ROSTRO, traveled to the US in 2004 to study directly under Erna Knutsen, the godmother of specialty coffee herself, sharpening his skills in bean quality assessment and objective cup scoring. In 2006, he earned his Cupping Judge qualification from the Specialty Coffee Association of America (SCAA), and by 2007 he was certified as a Q-grader by the Coffee Quality Institute (CQI). CAFE ROSTRO uses only certified specialty beans, roasted in-house, to craft one-of-a-kind cups built around a signature sweetness.

Whether it's a pour-over or a latte, everything starts with grinding the beans fresh after hearing what you're in the mood for, often blending several types of beans into a single cup.

Here's the fun part: while most cafes use electric grinders, CAFE ROSTRO grinds every batch by hand.

On my visit, Shimizu-san asked me a handful of questions: Do you prefer something acidic or bitter? Heavier and bold, or light and delicate?

More chocolatey hazelnut notes, or bright, vivid fruit flavors? He jotted my answers down carefully as we talked, and I told him: not too acidic, please, and something light with a hazelnut character.

The pour-over he crafted from our little chat hit the mark perfectly! The aroma hit me the moment it was served, and the first sip completely rewrote what I thought I knew about coffee, not a trace of bitterness, just a clean, gentle sweetness with layer after layer of aroma, delicate and ever-changing.

It really did carry that light, hazelnut-forward character I'd described, yet stayed wonderfully refreshing. A few sips in, I could actually feel the flavor evolving across my tongue, from the front of the palate through to the finish.

That one cup was enough to convince me that coffee really does have an addictive kind of magic, and it gave me a whole new appreciation for it.

The beans are roasted in-house specifically for this dessert, then rested in storage at a set temperature for about a month and fine-tuned before being brewed into ristretto, a shot twice as concentrated as a standard espresso.

CAFE ROSTRO only pairs its soft-serve with ristretto, and the ice cream itself is made with rich Hokkaido milk containing at least 3.7% milk fat. The deep aroma of the ristretto combined with that creamy milk gives this dessert a rich, velvety texture, with the coffee's signature bold finish lingering long after each bite.
