Step into Vegan Ramen UZU Kyoto and the first thing that hits isn’t aroma, but visuals. Created in collaboration with the renowned art collective teamLab, the space features the dynamic digital artwork Reversible Rotation – Black in White flowing across the walls.
At the center is a sleek, polished black counter that mirrors the shifting ink patterns, pulling you into what feels like a boundless, three-dimensional art space. Here, dining goes beyond taste, becoming an immersive experience that blurs the line between food, nature, and art.

Vegan Ramen UZU Kyoto holds a standout position in the culinary world. In the latest edition of the Michelin Guide Kyoto Osaka 2026, it continues to set records:
・Michelin Green Star: Awarded for two consecutive years. It remains the world’s first ramen-focused restaurant to earn this distinction, recognizing its commitment to sustainability, environmental care, and responsible sourcing.
・Consistent Recognition: Also named a Bib Gourmand for five straight years, highlighting its continued excellence in both quality and flavor.
A Vegan Course That Redefines Expectations
There’s no à la carte here. Instead, the “UZU Signature Course” guides diners through a fully curated plant-based journey. From the first sip to the final dessert, each dish reflects the restaurant’s fusion of architecture and art.

Welcome Drink
Choose between roasted hojicha tea or a refreshing, lightly tangy yuzu liqueur. Served in minimalist glassware, it sets the tone for the sensory experience ahead.

Creative Starter
Vegan cheese with yatsuhashi: One of the most surprising combinations on the menu. Ten carefully layered ingredients create a rich, nutty, miso-infused vegan cheese, paired with Kyoto’s iconic yatsuhashi. The result is a crisp, sweet-savory bite that challenges expectations of traditional wagashi.

Hand Roll Sushi with Tsukudani Shiitake
In line with its zero-waste philosophy, the chef repurposes Rausu kelp and shiitake mushrooms left from the ramen broth, slowly simmering them into a deeply savory tsukudani. Paired with red vinegar rice, fresh sansho pepper, and shiso, this hand roll delivers bold umami with a refreshing, aromatic kick.
Signature Ramen – Choose One:

Soy Sauce & Mugwort Fermented Ramen:
The broth is crafted from Rausu kelp and domestic shiitake mushrooms, slowly extracted over 12 hours at low temperature, then infused with a unique mugwort fermentation. The result is a delicate umami sweetness layered with deep herbal notes. The noodles, made from Hokkaido wheat and pesticide-free whole grain flour from Miyazaki, are rich in flavor with a satisfyingly firm bite.

Spicy Miso & Sake Lees Ramen:
A bold choice for those who prefer deeper flavors. Rich miso blends with the aromatic complexity of sake lees, creating a broth with a smooth, almost fermented butter-like depth. A gentle spicy finish adds an extra layer of intensity that keeps you coming back for more.

The course concludes with a scoop of finely textured roasted soybean flour ice cream, offering a soft, nutty sweetness.
Drink Pairings:
Beverage options are equally thoughtful, from aromatic junmai ginjo sake to the balanced bitterness of GORA Brewery Amber craft beer. Guests can also opt for premium teas from Saga’s Ureshino, or a Japanese-style kombucha infused with mugwort and kuromoji, adding an elegant, woody finish that lingers alongside dessert.

With its distinctive design and limited seating, Vegan Ramen UZU Kyoto operates on a reservation-first basis. Be sure to book well in advance. After your meal, it’s well worth continuing the experience at teamLab Biovortex Kyoto, also located in Kyoto.
There, you can dive deeper into teamLab’s immersive world centered on the theme of “life in motion,” extending UZU’s refined culinary experience into a mesmerizing visual journey. Pairing food and art like this makes for a memorable early summer outing in Kansai.
