At Totoshigure You Get Kobore Ikura Don with Only the Most Carefully Selected Ingredients
The second Tokyo sushi restaurant, Totoshigure, is located along the street Meiji Dori. You will notice immediately when you look at the menu that their kobore ikura-don, called “Ootsubu Ikura no Kobore Meshi,” clearly has much more salmon roe than rice! It's not only about the quantity, however. They are also very particular about the quality of the salmon roe, their main ingredient, which is hand selected by the head chef himself, an expert in traditional Japanese cuisine. The last Tokyo sushi restaurant is called En, which is a short 1-minute walk from Funabori Station on the Toei Shinjuku Line. The salmon roe they use for their kobore ikura don are taken from Hokkaido salmon, carefully selected by the shop manager. Born in Hakodate, the manager himself serves and prepares the salmon roe until it spills over the edge of the bowl right in front of the customer.
The manager has a passion and eagerness to get people to experience and enjoy Hokkaido's taste. As generous and eager as he is with his portions, you wonder how he makes any money at all. The shop's charming retro atmosphere allows single customers to feel comfortable and relaxed.
