Located in a place called Oku-Biwako in the northern part of Shiga Prefecture, the auberge restaurant SOWER serves Kohoku cuisine based on the concept of "food that can only be eaten here."
Chef Coleman, who is from the United States, skillfully uses techniques from Japanese food culture such as fermentation, aging, and dashi stock to explore new tastes that are different from those of Japanese chefs and provide innovative dishes.
Another big attraction is the nature of Oku-Biwako. The fact that there is "nothing" is a big attraction.
There is nothing artificial around, and you can experience the "out of the ordinary" that you cannot find in the city, such as the voices of birds, the sound of the wind, the scent of the forest, and the scent of flowers.
