In this guide, we spotlight restaurants where vegetables take center stage. You’ll also find clear information on ingredients, including vegan availability and whether dishes are free from the five pungent roots, such as green onions and garlic. Use the vegetarian-friendly restaurant guide “Saga’s Table for Everyone” on Saga Prefecture’s official tourism site, Asobo Saga, to enjoy Saga’s hospitality through vegetable-rich cuisine.
Why Saga Prefecture Should Be on Your Next Trip to Japan

In recent years, Kyushu has been attracting more repeat visitors to Japan. Saga Prefecture, which is rich in nature and traditional culture, is considered a hidden gem within the region. This is where the world-renowned Arita porcelain is produced, and where many long-standing hot springs are located. With its vast plains producing high-quality vegetables, Saga is highly acclaimed as a place where visitors can peacefully enjoy authentic Japanese culture.
Saga, an area overflowing with delicious, healthy produce

Saga Prefecture is one of Japan’s leading agricultural areas. Here, the sun's rays shine over the vast plains, yielding delicious vegetables that retain their distinct natural flavors and umami. Many standout vegetables are produced here, such as exceptionally sweet onions, perfectly crunchy lotus root, and juicy asparagus.

As Saga Prefecture offers many delicious vegetables, it is home to a wide variety of restaurants using local produce. An increasing number of restaurants now offer vegetarians the chance to enjoy the bounty of the earth alongside their non-vegetarian friends. Everyone can find something that will suit their taste and dietary needs in Saga cuisine.
We will now introduce some delicious restaurants in Saga Prefecture that offer vegetarian menus.
1. Ureshino Sushi (Saga City): Vegetable sushi meticulously crafted by a long-standing restaurant to visit on special occasions

The renowned Ureshino Sushi restaurant, established more than 50 years ago, has earned the trust of many locals who often visit for important celebrations. True to its name, meaning “happy sushi,” the chef’s skilled hands and the owner’s warm hospitality can be felt everywhere. While fresh seafood is the most common sushi topping, this restaurant offers a creative menu designed for vegetarians who wish to enjoy authentic sushi.

The vegetarian menu includes nigiri and maki made with fresh local vegetables, such as okra, myoga ginger, nagaimo mountain yam, and daikon radish sprouts. The chef blends fresh vegetables with traditional techniques honed over many years to offer a visually appealing sushi and unusual, delicious flavors.
You can share a relaxing meal with fish lovers at the counter or in a private room.

This organic restaurant is located in Karatsu City, surrounded by the beautiful Genkai-Nada Sea and lush nature. The menu includes dishes featuring organic rice, as well as vegetables, and reflects Owner Ikeda’s aim to “convey the importance of food through delicious vegetable dishes.” The restaurant cultivates dozens of vegetable varieties each year and selects which to include in the menu based on the body’s needs and seasons. In winter, they pick ingredients that warm the body from the inside out, while in summer, they opt for those that help keep the body cool.

Each dish is carefully crafted and uses homemade fermented seasonings, such as koji and miso, to bring out the vegetables’ strong natural flavors.
