The “joman” consists of handmade sweet bean paste enveloped in a dough made from ginjoshu and sake lees but without using water, all in perfect harmony. Made from authentic bracken starches, the warabi mochi provides a chewy texture that perfectly complements deeply roasted soybean flour.
