Each eel is carefully char-grilled and served with our tried and tested homemade sauce. We make changes based on the unique characteristics of the eel, such as the intensity of the fire, the degree of grilling, and when to add the sauce. In addition, we use Koshihikari rice produced in Fukui Prefecture and provide home-cooked rice every day.
