What to expect

[A superb space limited to 15 people per day] Kanagawa Prefecture's only hot spring tofu shop has started serving shelled sea urchin. We offer our specialty "melting tofu", carefully selected fish dishes, a la carte dishes, and seasonal sake. [Ultimate fresh fish] Japanese cuisine artisans purchase and age local fish in-house. We overturn the conventional wisdom of fish by "improving the flesh, suppressing odor and bacteria, and increasing the flavor". The method is the Tsumoto method, so please try it.
