- You will have the opportunity to taste the unique umami of each type of dashi. Please savor a taste of kombu dashi (prepared three days in advance). Next, experience the umami of the finest dashi by shaving bonito flakes. We take pride in using water from Yoro, Gifu Prefecture.
- You'll witness the preparation of dishes such as dashi-maki tamago (rolled omelette with dashi) and miso soup right in front of you across the counter. Engage in lively conversation with the chef as you experience an immersive demonstration.
