Sitting at the counter and watching the owner brew coffee using a velvet drip cloth is a unique experience. Unlike using paper filters, using a velvet drip cloth is a highly skilled manual brewing method.

The coffee beans are ground coarser, a larger amount of coffee is used, and factors like pouring the water too quickly or having the water too hot can all affect the taste. It's a meticulous process that results in a distinct and carefully crafted cup of coffee.
