We are particular about using local Enshu ingredients and making our products by hand, and our specialty is Hamamatsu gyoza, which are wrapped with care by our craftsmen every day and finished crispy on a large 2cm thick iron plate. In order to preserve the crunchiness of the vegetables, we only make the amount we serve in the restaurant each day, and we do not use frozen gyoza at all. Other dishes include Hamamatsu offal, fresh fish caught in the Enshu Nada Sea, Enshu Yume pork, Mikatahara potatoes, and eel from Lake Hamana.
