The restaurant's signature dish is motsunabe, served with four different types of soup, each with a different flavor. Made using only the small intestines of domestically produced Japanese beef, the motsunabe has a bouncy texture full of collagen. The restaurant also serves a wide variety of Kyushu local dishes, including extremely fresh horse sashimi and homemade mentaiko, and is particular about using vegetables such as cabbage and chives that are also from Kyushu.
